Popcorn with a Zing

Yesterday I wanted to pop some popcorn. Rather than salt and butter, I go for seasonings on my popcorn to add a simple, healthy, delicious twist to this light treat.

Depending on my mood, I can go from savory to sweet, from snack to full-on meal. Sometimes it’s a dash of cinnamon and sprinkle of cayenne pepper, other times it’s Parmesan and red pepper flakes, and then there’s always crushed up and cooked up into a popcorn cake (mix in a little protein like crab, veggies like onions, and voila!).

But yesterday, I was definitely craving jalapeño – probably because we recently infused olive oil with fresh jalapeños from the garden and I was anxious to try it on just about anything!! So, I put 1/4 cup of kernels on the stovetop and popped it right in with 2 tablespoons of jalapeño olive oil!!

And, for a little added zest, I sprinkled in a teaspoon of dried cranberries to the popped corn. The combination of the tart berries and the spicy oil gave it just the right zing of flavor, and I was in foodie heaven.\
