I realized this when I was diagnosed with borderline diabetes almost a decade ago. I was always tired, and just downright mean to myself. You know, feeling “fat” in everything I put on, beating myself up over the image in the mirror, asking my mother if my butt looked big in my jeans. Ugh! No wonder I didn’t take care of myself well. After all we nurture what we love, right?I finally decided to love myself as I was, stop the yo-yo “can I eat carbs this week?” diets, and just take care of myself from the inside-out. I always thought about food in terms of “dieting”, and looked at food as a means to lose weight or gain weight. It was a vicious cycle- the “dieting wheel of frustration”. Instead, I studied what healthy really meant and what foods actually did to my body.
In learning about food, I was able to stop dieting altogether. Ironically when I stopped “dieting”, I lost over 125 pounds and the blood sugar issues went away? Go figure. Nourishing my body keeps me feeling more “in balance” even when life is hectic.
Like most of you, I have a busy schedule. I don’t have time to spend fixing complicated meals in the morning, but the normal “grab ‘n go” stuff just bores me. I got a little creative with what was left in the refrigerator and came up with a simple, healthy, delicious breakfast I had to share with you!!
Creamy Pumpkin Blueberry Smash
What You’ll Need
¼ cup of pumpkin (no sugar- just pumpkin, leftover from the super delicious pumpkin muffins my daughter Millana made last week)
¼ cup non-fat plain greek yogurt (it is SOOO much more creamy and thick than the regular plain non-fat yogurt)
¼ cup blueberries (they are in season now, so full of delicious natural sweetness)
Optional Added Ingredients to Spice It Up
pinch of vanilla extract
pinch of cinnamon
pinch of pine nuts
Let’s Do It
It’s really easy!! Throw all the ingredients in your “to-go” container and mix it up with a spoon. It tastes like a creamy pumpkin blueberry cheesecake with none of the fat or calories!!

Blueberries and pumpkin are packed with antioxidants, to keep your immune system strong and energy up, not to mention the anti-aging benefits for your skin. Cinnamon is a wonder spice which helps our blood sugar, brain, and LDL cholesterol, and pine nuts (also filled with antioxidants, healthy fats) are nature’s “disinfectant” keeping our system clean.
