28 Healthy and Delicious Meals

When it comes to eating, I am not a fan of simply chomping on celery or carrots, and calling it a day. While these veggies are delicious and essential, I love food and starvation diets do not work for me. I firmly believe that when we eat real food, we feel real good. You see, eating food isn’t just about satisfying hunger- it’s about the way we live, breathe, communicate, work, play… food literally affects all of these things.

For example,  if you think all of your co-workers are nasty, maybe it’s because the pop tart you ate on the drive to work caused your blood sugars to go all wacky and you came in with a frown on your face so everyone frowned back. Try a breakfast that gives you great energy, come in smiling, get smiles back. I learned this the hard way many years ago, but it’s actually pretty simple when you think about it.

To make it even more simple, I created a sample list of meal ideas to get you thinking that real food that makes you feel real good can taste real good, too.

Breakfast Ideas
• Cooked oat cereal w/cinnamon
• High-fiber cereal w/almond milk and fruit
• Egg-white omelet with salsa and low fat cheese in a tortilla
• Egg-white omelet with cinnamon and maple syrup
• Hard boiled egg with lean turkey sausage
• Toasted whole wheat bread with teaspoon apple/peanut butter
• Toasted wheat English muffin with avocado and tomato
• Protein drink with fruit and wheat germ blended into smoothie
• Plain lowfat yogurt with coconut extract and berries
• Pumpkin bran muffin with ½ teaspoon of almond butter

Lunch Ideas
• Chicken salad made with apples, celery, tarragon, lemon, fennel tossed in a Dijon-Yogurt dressing
• Tuna salad made with Dijon mustard and ½ teaspoon mayo on wasa
• Create your own broth based soups using low-sodium stocks or broths, lots of veggies, seasonings, etc.
• Green leafy salad tossed with olive oil and splash of balsamic w/ chicken
• Veggie burger on toasted whole wheat English muffin with marinara
• Spinach leaf used as “wrap” for turkey, tomato, and hummus
• Fresh mozzarella, sundried tomato, basil in whole grain pita
• Smoked salmon, cream cheese on Wasa crackers with tapenade
• Chili made with turkey or all beans, corn, celery, tomato, onions. Pepper

Dinner Ideas
• Whole Grain Pizza with fresh mozzarella, tomato, basil
• Mediterranean chicken with tomato, olives, and white beans
• Broiled tilapia with rosemary and lemon served with couscous
• Chicken with lemon, olive oil, capers, Dijon mustard w/yams
• Wild salmon with fresh ginger, spices served over rosemary asparagus
• Vegetable stir fry with olive oil and low sodium soy sauce
• Grilled peanut shrimp made with natural peanut butter, fresh lime juice, cayenne pepper, almond milk
• Chicken kabobs served with brown rice and grilled pears
• Seafood crock pot paella made with tomatoes, scallop, tilapia, veggies served
